Hands up who likes Pizza?
Yeah we do as well. How about trying this tortilla base pizza recipe that is nutritious and a fraction of the high calorie and fat versions!
You can create your own and experiment using a wholemeal tortilla wrap as the base. This recipe is for 2 and takes just 10 mins to prep and cook!
2 wholemeal tortillas,
2 tablespoons tomato purée
100 g cooked skinless, boneless chicken breast, chopped – try using prawns instead of more veg options?
60 g sweetcorn
8 cherry tomatoes, quartered
a handful of fresh basil leaves
50 g half fat mature cheese, grated
salt and freshly ground black pepper
Preheat the grill.
Place the tortillas on a large baking tray and spread thinly with the tomato purée, all the way out to the edges.
Scatter the chicken or main topping of choice along with the sweetcorn and tomatoes over each tortilla pizza, followed by the basil leaves and cheese. Season lightly.
Grill for 3–5 minutes (depending on how hot your grill gets), until the cheese is melted and bubbling and the tortilla is crisping up around the edges.
Cut into slices and serve immediately!
Our kids love these and we often have these as a quick lunch if at home. The calories (depending on your topping of choice) will be around 300/350. This version with Chicken as the main protein topping comes in at around 300 calories. Have a nice side salad and some fruit and you have yourself a nutritious meal. Don’t forget the water!
